Our next batch ‘Customer Favourite’ recipes are now live on the Mindful Menu!

These 4 recipes have been chosen based on which meals our customers have enjoyed the most. Want to have your say and get your favourite recipes back on the menu? Take a look at the bottom of this blog to find out how.

The ‘Customer Favourites’ will change every 6 weeks and will run alongside our existing 12 weekly recipes, increasing your choice to 16 delicious healthy recipes each week!

Here is a sneak peak of the tasty favourites you could be tucking into between now and December…

1. Veggie lasagne with aubergine & pesto

For a healthy take on an Italian classic, try our veggie lasagne. We’ve swapped traditional lasagne sheets for nutritious baked aubergine slices, a layer of rich cannellini bean ragu and delicious basil pesto, finished with a scattering of pine nuts.

2. West African chicken, coriander & peanut stew

535 calories • 37g carbs • 20g fat • 55g protein

As the nights draw in, cosy up at home with our spicy South African peanut stew, made with a warming blend of ground cinnamon, ginger, nutmeg, cumin and coriander! This delicious dish features succulent free-range chicken breasts from our award-winning supplier Farmison and is served with low carb cauli rice.

3. Lemongrass trout with coconut lime rice

We’ve baked trout with a fragrant Thai blend of fresh lemongrass, garlic and chilli for a metabolism boost and served with a creamy coconut & lime rice, crunchy pak choi and a sprinkling of toasted sesame seeds. Our omega-3 rich trout is ethically and sustainably sourced from James Knight of Mayfair, the holders of a royal warrant.

4.Balsamic & mustard beef with squash mash

Featuring award-winning grass-fed beef from Farmison, it’s no surprise this recipe is a popular choice! We’ve served flat iron steak with a rich balsamic and maille mustard glaze, alongside a spinach and squash mash – a delicious nutrient-packed alternative to potato, to keep the heart healthy.
