- 2 free-range chicken breasts
- 40g kale
- 30g Belazu pitted black olives
- 1 red onion
- 1 handful of fresh rosemary
- 1 vegetable stock cube (use half) (Celery)
- 40g sundried tomatoes
- 300g sweet potato
- 2 large tomatoes
- 2 tbsp tomato puree
Cooking Instructions
Here are the easy instructions you need to create this chicken cacciatore recipe full of beautiful flavours.
- Boil a kettle. Dissolve the half vegetable stock cube in a jug with 150ml boiling water.
- Peel and cut the sweet potato into 1cm cubes. Thinly slice the red onion and finely dice the large tomatoes. Roughly tear the kale and roughly chop the rosemary (discarding the stalks).
- Slice each chicken breast into 3 pieces.
- Place the sweet potato in a saucepan, cover with boiling water and simmer for 10 mins until softened. Drain, mash, season with a pinch of sea salt and black pepper and keep warm.
- Meanwhile, heat a medium-sized pan with 1 tbsp oil on a medium heat. Add the chicken and cook for 2-3 mins each side, then add the onion for 3 mins.
- Add the diced tomatoes, tomato puree, vegetable stock, sundried tomatoes, black olives, kale and rosemary to the pan and simmer for 10 mins until the chicken is cooked through and the sauce has thickened. Season with black pepper.
- Spoon the chicken cacciatore into two warm bowls, alongside the sweet potato mash.

- 80g buckwheat
- 300g diced free-range chicken breast
- 120g chestnut mushrooms
- 30g Belazu pitted black olives
- 1 red onion
- 1 handful of fresh rosemary
- 80g baby spinach
- 1 vegetable stock cube(Celery)
- 40g sundried tomatoes
- 2 large tomatoes
- 2 tbsp tomato puree
Cooking Instructions
In less than ten steps you will have made this authentic chicken cacciatore recipe with a Mindful Chef twist. To start, follow these simple instructions:
- Boil a kettle.
- Dissolve just half the vegetable stock cube in a jug with 500ml boiling water. Rinse the buckwheat, then place into a saucepan and pour in the vegetable stock from the jug. Simmer for 15 mins, then drain.
- Heat a medium-sized frying pan with 1 tbsp oil on a medium-high heat. Add the diced chicken and cook for 5 mins, until turning golden.
- Meanwhile, dice the red onion, thinly slice the mushrooms and roughly chop the rosemary (discarding the stalks). Add the onion, mushrooms and about 1 tsp chopped rosemary to the pan. Cook for 3 mins until softening.
- Roughly slice the sundried tomatoes and finely dice the large tomatoes. Dissolve the remaining half stock cube in a jug with 50ml boiling water.
- Add the diced tomatoes, tomato puree, sundried tomatoes, black olives and spinach to the pan. Pour in the stock from the jug. Simmer for 6 mins, until the chicken is cooked through and the sauce has thickened. Season with black pepper.
- Place the buckwheat into warm bowls and spoon the chicken cacciatore alongside.
