To create the perfect Mexican tortilla recipe you will need to find quality ingredients. For this Mexican recipe you will need:
- 10 tbsp chickpea flour
- 1 handful of fresh chives
- 1 handful of fresh coriander
- 1 tsp harissa paste
- 50g smoked pink kraut
- 1 little gem lettuce
- 1 lime
- 1 spring onion
- 90g baby plum tomatoes
- 80g coconut yoghurt
- 300g Mexican flavoured beef mince
Cooking Instructions
Unlock your new favourite Mexican recipe with a few simple steps. Here are the easy instructions you need to create this scrumptious dish full of beautiful flavours.
- Finely chop the coriander and chives. Make the tortilla; whisk together the flour and 120ml water to achieve a batter (add a little more water, if needed), then mix in half the chopped herbs. Lightly season with sea salt and black pepper, then leave to stand for 10 mins.
- Meanwhile, shape the mince into 10 meatballs and set aside. Mix together the yoghurt and remaining herbs, then lightly season with sea salt and black pepper.
- Cut the lettuce into 6 wedges. Thinly slice the spring onion. Halve the tomatoes. Quarter the lime.
- Heat a medium frying pan with 1 tsp oil on a medium-low heat. Cook the meatballs for 10 mins, turning regularly, then add the harissa paste and 1 tbsp water. Reduce slightly, until thickened, then set aside.
- Meanwhile, heat a separate small frying pan with 1 tsp oil on a medium-high heat. Add half the batter and cook on both sides for 1-2 mins, until golden. Repeat to make a second wrap.
- Lay the wraps flat and smooth over the chive yoghurt. Add the lettuce followed by the spring onion, tomatoes and pink kraut. Spoon over the meatballs with sauce, then garnish with the remaining chopped herbs and lime wedges.

- 240g black beans (drained)
- 8 tbsp buckwheat flour
- ½ tsp red chilli flakes
- 1 handful of fresh coriander
- 2 tsp harissa paste
- 225g jackfruit (drained)
- 1 lime
- 2 spring onion
- 40g baby spinach
- 120g baby plum tomatoes
- 4 tbsp tomato puree
Cooking Instructions
In just over five steps you will have made a beautiful Mexican recipe with a Mindful Chef twist. To start, follow these simple instructions:
- Boil a kettle. Thinly slice the spring onions. Finely chop the coriander. Drain the jackfruit and beans, then rinse.
- Heat a medium pan with 1 tsp oil on a medium heat. Add half the spring onions, cook for 1 min, then add the jackfruit, tomato puree, harissa, beans and 150ml boiling water. Season with sea salt and black pepper; cook with a lid on for 10 mins. Remove the lid, add the spinach and cook for a further 5 mins. Add the chilli flakes (to taste) and a little more boiling water to thin the sauce, if needed. Pull the jackfruit apart with forks.
- Meanwhile, make the pancake batter. Place the flour in a bowl and slowly add 180ml cold water – mixing as you go, until you have a smooth batter. Add a pinch of sea salt and black pepper; stir in half the coriander.
- Heat a large frying pan with 1 tsp oil on a medium heat. Pour in half the batter and swirl around the pan to create an even layer. Cook for 3 mins on each side, until turning golden brown. Repeat with the remaining batter.
- Make the salsa; halve the tomatoes and add to a bowl. Add half the remaining spring onions and the remaining coriander. Stir in the juice from half the lime. Season with sea salt and black pepper.
- Serve the pancakes topped with the jackfruit and salsa. Scatter over the remaining spring onions. Finish with a squeeze of lime juice.

Ingredients
The ingredients you will need for this delicious Mexican recipe are:
- 1 red chilli (use half)
- 1 handful of fresh coriander
- 30g creamed coconut(Sulphites)
- 1 lime
- 1 tbsp Mindful Chef Mexican spice mix
- 2 spring onion
- 1 red pepper
- 250g steamed brown basmati rice
- 2 salmon fillets (skin on)(Fish)
- 1 tbsp tamari (Soya)
- 150g sweetcorn (drained)
Cooking Instructions
To create a nutritious Mexican rice recipe, you just need to follow six simple steps. To produce this flavoursome dish start by:
- Preheat the oven to 200C / fan 180C / gas mark 6. Boil a kettle. Dissolve the creamed coconut in a jug with 80ml boiling water.
- Place the salmon on a small baking tray (skin-side down). Drizzle with 1 tsp oil, then sprinkle over the spice mix and a pinch of sea salt, ensuring the fillets are evenly coated. Bake for 12 mins, or until cooked through.
- Dice the pepper. Thinly slice the spring onions. Heat a large frying pan with 1 tsp oil on a medium heat. Add the pepper and half the spring onions, then cook for 3 mins.
- Drain the sweetcorn and add to the pan, followed by the rice. Cook for 2 mins, then add the creamed coconut. Stir everything together and cook for a further 1 min, then remove from the heat. Roughly chop the coriander and thinly slice the half chilli (remove the seeds for less heat). Add half the coriander to the pan; season with sea salt and black pepper. Stir.
- Halve the lime. Squeeze the juice from half the lime into the rice.
- Serve the rice drizzled with the tamari and the salmon flaked over the top. Garnish with the chilli slices (to taste), remaining coriander, remaining spring onions and a squeeze of lime juice.
