Turkey Chow Mein with Brown Rice Noodles & Rainbow Veg

Hungry kids? This fakeaway favourite is on the table in 20 mins! Tender British turkey is sizzled with bright carrots, crunchy mangetout and juicy peppers, than coated in a sticky hoisin sauce. Toss through wide brown rice noodles to soak up all the flavour and finish with a sprinkle of sesame seeds. A delicious family meal that’s quick, easy and sure to go down a treat. Before you start

  • Bring a large saucepan filled with salted water to a boil
  • Pull out a large frying pan, a measuring jug & a sieve

Prep the veg

  • Halve the carrots lengthways, then slice into 1/2cm thick half-moons (peel optional). Thinly slice the peppers. Thinly slice the onion

Sizzle the turkey & boil the noodles

  • Heat the large frying pan with 1 tbsp oil on high heat. Once hot, add the turkey and carrot and cook for 5 mins, until golden and softened. Season with salt and pepper
  • Meanwhile, add the noodles to the saucepan, gently separate with a fork and boil for 6-7 mins, until cooked. Drain, then toss with 1 tsp olive oil

Build the dish

  • Add the pepper, onion and ginger & garlic paste to the turkey pan. Cook for a further 4-5 mins, then add the hoisin sauce, honey, tamari and 100ml water
  • Add the mangetout, bring to the boil and simmer for 2-3 mins, until the sauce is thickened and the turkey is cooked through
  • Add the cooked noodles, then toss to combine. Add a splash of water if needed. Season with salt and pepper to taste

Plate up

  • Check your turkey pieces are cooked through; the meat should be white with the juices running clear
  • Serve the turkey chow mein into bowls. Sprinkle over the sesame seeds
