Sticky Hoisin Salmon Traybake with Wide Brown Rice Noodles & Rainbow Veg

This delicious traybake is sure to go down a treat with the whole family. Starring buttery responsibly-sourced salmon, and a medley of vibrant veg for a pop of colour. Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9
  • Bring a large saucepan filled with salted water to a boil
  • Pull out a large baking dish, a small bowl & a sieve

Roast the veg & salmon

  • Cut the onions into 2cm wedges. Thinly slice the pepper. Cut the broccoli into small florets
  • Add all to the large baking dish and toss with 2 tsp oil, salt and pepper. Place the salmon fillets on top (skin-side up), drizzle with 1 tsp oil and season with salt and pepper
  • Roast for 20 mins, until the salmon is cooked through and the veg has softened

Finish the prep & boil the noodles

  • Meanwhile, in the small bowl, combine the hoisin, tamari, honey and 1 tbsp water
  • Add the noodles to the saucepan, gently separate with a fork and simmer for 6-7 mins, until cooked. Drain, then rinse under cold water

Finishing touches

  • Check your fish is cooked through; it should be steaming hot, opaque and separate easily with a fork
  • When everything's ready, remove the tray from the oven. Set the roasted salmon aside, then add the noddles and hoisin sauce to the veg. Toss to coat evenly

Plate up

  • Share the noodles between bowls. Top with the salmon and drizzle over any remaining sauce from the dish. Garnish with the peanuts
