Sticky Hoisin Salmon Traybake with Noodles

Responsibly-sourced salmon is baked with sticky sweet hoisin, tenderstem broccoli and pak choi. Toss in brown rice noodles for comfort and fibre. The best part? You only need minimal equipment, making those busy weeknights oh-so-easy!

Before you start

  • Preheat the oven to 240C / fan 220C / gas 9
  • Bring a large saucepan filled with salted water to a boil
  • Pull out a large baking dish, a grater, a sieve & a small bowl

Get roasting

  • Peel and cut each onion into 8 wedges. Zest and halve the lime
  • Place the salmon, skin-side down, and the onion into the large baking dish, drizzle with 1 tbsp oil and season with salt and pepper. Sprinkle the lime zest over the salmon
  • Roast for 10 mins

Prep time & cook the noodles

  • Meanwhile, trim the broccoli and cut into thirds. Trim and cut the pak choi into bite-sized pieces
  • In the small bowl, mix together the hoisin, tamari, honey, the juice from half the lime and 2 tbsp water
  • Add the noodles to the saucepan, gently separate with a fork, and boil for 3-4 mins, until cooked
  • In the final 1 min, add the pak choi, then drain together. Rinse well under cold water

Add the veg

  • After 10 mins of roasting, add the broccoli to the baking dish. Season with a good pinch of salt
  • Return to the oven for a final 10 mins, until the salmon is cooked through and the veg is golden and soft

Toss the noodles

  • Check your fish is cooked through; it should be steaming hot, opaque and separate easily with a fork
  • Once cooked, remove the salmon from the baking dish and set aside. Add the cooked noodles, pak choi and hoisin mixture to the baking dish. Toss well to coat, return to the oven for 1-2 mins, until hot. Season with a pinch of salt and pepper

Last bits & plate up

  • Serve the hoisin noodles into bowls, topped with the roasted salmon
  • Sprinkle with the sesame seeds and garnish with the remaining lime, cut into wedges
