Baked Cod Nuggets with Sweet Potato Wedges, Peas & Broccoli

Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9
  • Line 2 baking trays with parchment paper
  • Pull out a large saucepan, a large plate & a sieve

Get the wedges on

  • Cut the sweet potatoes and potatoes into wedges. Place the wedges onto a lined baking tray and toss with 1 tsp oil, a pinch of salt and pepper and the paprika & oregano blend (feel free to leave out for the kids)
  • Roast for 25-30 mins, until soft and golden

Crumb the fish

  • Use your hands to lightly crush the pea crumb, then add to the large plate and season with salt and pepper
  • Drizzle the cod chunks with 1 tbsp oil until well coated, then add the cod chunks to the plate, two at a time, and pat the crumb onto the chunks
  • Place evenly onto the other lined baking tray. Repeat until all of the cod chunks are coated. Sprinkle over any remaining crumb
  • Bake for 16 mins, until golden and cooked through

Boil the greens

  • Meanwhile, cut the broccoli into small florets
  • Bring the large saucepan filled with salted hot water to a boil. Add the broccoli and boil for 3-4 mins, adding the peas in the final 1 min, then drain together

Plate up

  • Check your fish is cooked through; it should be steaming hot, opaque and separate easily with a fork
  • Serve the cod nuggets onto plates, with the wedges, peas and broccoli alongside. Add a dollop of ketchup for dipping
