Harissa Honey Chicken with Chickpea & Sweet Potato Tagine & Parsley Yoghurt

A vibrant Middle Eastern-style feast, starring free-range chicken thighs, coated in fragrant harissa and roasted till golden. Serve atop a warm chickpea and sweet potato tagine. Finish with leafy parsley and a dollop of creamy yoghurt.

Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9 / air fryer 200C
  • Line a baking tray with parchment paper
  • Pull out a large frying pan, a small bowl, a sieve & a measuring jug

Time to roast

  • Dice the sweet potato into 2cm chunks and add to the baking tray. Toss with half the baharat, 1/2 tsp oil and a pinch of salt and pepper. Roast for 10 mins / air fryer 8 mins
  • After 12 mins / air fryer 10 mins, lay the chicken flat onto the other side of the lined baking tray and coat with half the harissa, half the honey, 1/2 tsp oil and a pinch of salt and pepper
  • Roast for a further 16-18 mins / air fryer 16 mins, until the chicken is cooked through and the potato is soft

Prep the rest

  • Thinly slice the onion. Halve the courgette lenthways, then cut into 1cm half-moons. Finely chop the parsley. Drain and rinse the chickpeas

Make the tagine

  • Heat the large frying pan with 1/2 tsp oil on medium heat. Once hot, add the onion and courgette cook for 5-6 mins, until softened
  • Add the ginger garlic paste and remaining baharat and cook for a further 1-2 mins, then stir in the passta, chickpeas, miso and 200ml water (100ml for 1 person)
  • Simmer for 6-7 mins, until thickened slightly

Final touches

  • Add the yoghurt and three-quarters of the parsley to the small bowl and stir to combine. Season with salt and pepper
  • Once cooked, stir the sweet potato, remaining honey and remaining harissa into the tagine. Season to taste. Add a splash of water if it's too dry

Plate up

  • Check your chicken is cooked through by inserting a skewer into the thickest part of the meat; the juices should run clear
  • Thinly slice the chicken
  • Share the tagine between bowls, topped with the chicken. Drizzle over the yoghurt and sprinkle with the remaining parsley to finish
