Before you start

  • Pull out a large lidded frying pan

Prep the veg

  • Finely dice the onion
  • Thinly slice the carrots into half-moons
  • Finely chop or crush the garlic
  • Roughly chop the sundried tomatoes and artichokes

Get cooking

  • Heat the large frying pan with 2 tbsp oil on medium-high heat. Once hot, add the onion and carrots and cook for 5 mins
  • Add the garlic, sundried tomatoes, harissa and artichokes and cook for 1 min
  • Drain and rinse one can of beans and add to the pan
  • Add the other can of beans (and its liquid), nutritional yeast, chopped tomatoes and 200ml of water

Add the greens

  • Trim the green beans and cut into thirds. Add to the pan and cook for 4-5 mins, until softened
  • Rinse the spinach, and gently stir in the final min
  • Squeeze in the juice of 1/2 a lemon (or to taste)

Hake time

  • Lay the hake on top the sauce. Cover with a lid and steam for 20 mins, until the fish is cooked through
  • Season with salt and pepper

Plate up

  • Check your fish is cooked through; it should be steaming hot, opaque and separate easily with a fork
  • Serve the stew in bowls with the remaining lemon cut into wedges, and drizzle with 1 tbsp oil
