Vietnamese-style Turkey Salad with Brown Rice Noodles

Before you start

  • Bring a large saucepan filled with salted water to a boil
  • Pull out a large frying pan, a large bowl, a sieve & a peeler or julienne peeler

Cook the noodles & mangetout

  • Add the noodles and mangetout to the saucepan, gently separate the noodles with a fork and boil for 3-4 mins, until cooked, then drain and rinse under cold water

Prep the salad

  • Meanwhile, peel the carrots into ribbons, then slice into long, thin strips (or use a julienne peeler or spiralizer if you have one). Thinly slice the cucumber into 1/2cm half-moons
  • Deseed and finely slice the chilli. Roughly chop the coriander. Pick the mint leaves from the stalks
  • Place all into the large bowl, along with the cooked noodles and mangetout. Add the sesame oil and toss to combine

Get sizzlin'

  • Heat the large frying pan with 1 tsp oil on high heat. Once hot, add the turkey and cook for 10 mins, until golden and cooked through. In the final minute of cooking, add the tamari and toss to coat. Season with salt and pepper

Bring everything together & plate up

  • Add the honey and the juice from the lime to the noodle salad. Season with salt and pepper, and mix well
  • Check your turkey is cooked through by cutting into a large piece; the flesh should be white and the juices running clear
  • Add the turkey to the noodle salad and mix together well
  • Serve the turkey salad into bowls, topped with the peanuts
