Crispy British Turkey, Smoky Beans & Sweet Potato Chips

Even fussy eaters will adore our goujons, made with juicy British turkey and baked in a golden, ground almond crisp. We pair them with more crowd-pleasing favourites – smoky beans and Mexican-spiced sweet potato fries – and sneak in greens with broccoli.

Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9 / air fryer 200C
  • Line a baking tray with parchment paper
  • Pull out a sieve, a medium saucepan, a large frying pan, 2 large bowls, a grater & a measuring jug

Roast the chips

  • Cut the sweet potatoes into chips. Place onto the lined baking tray and toss with 1 tbsp oil, half the Mexican spice mix and a pinch of salt and pepper
  • Roast for 18 mins

Simmer the cannellini beans

  • Meanwhile, finely dice the shallot. Drain and rinse the beans
  • Heat the medium saucepan with 2 tsp oil on medium heat. Once hot, add the shallot and cook for 4-5 mins, until softened. Season with salt and pepper
  • Add the paprika & oregano blend and cook for another 30 secs, then add the beans, passata, vinegar and 50ml water. Bring to the boil, then lower the heat and simmer for 6-8 mins, until thickened. Season with salt and pepper

Fry the turkey

  • Meanwhile, slice the turkey into 1cm thick strips and add to a large bowl with the garlic herb paste. Season with salt and pepper
  • In the other large bowl, combine the cornflour, ground almonds, remaining Mexican spice and a pinch of salt. Add the turkey strips and toss to coat
  • Heat the large frying pan with 1 tbsp oil on medium-high heat. Once hot, add the turkey and cook for 12 mins, turning regularly, until golden and cooked through

Roast the broccoli

  • Trim the broccoli
  • After 18 mins, add the broccoli to the sweet potato tray. Drizzle with 1 tsp oil and season with salt and pepper. Roast together for a final 10-12 mins, until soft and golden

Plate up

  • Check your turkey is cooked through by cutting a large piece in half; the flesh should be white and the juices running clear
  • Reheat the beans if needed
  • Serve the turkey onto plates, with the smoky beans, sweet potato chips and broccoli alongside. Finely grate over the cheese
