Cooking Instructions

Before you start

  • Pull out a large saucepan, a medium frying pan, a measuring jug & a peeler

Time to prep

  • Quarter the lime. Discard the outer layer of the lemongrass, then halve widthways. Use the back of a knife to bruise half of the lemongrass, then finely chop the remaining
  • Thinly slice the spring onion. Trim the green beans and cut into thirds. Cut the pak choi into bite-sized pieces. Peel the carrot into ribbons

Fry the prawns

  • Drain the prawns
  • Heat the medium frying pan with 1 tsp olive oil on high heat. Once hot, add the prawns and chopped lemongrass and cook for 8 mins, until the prawns are pink and cooked through
  • In the final 2-3 mins, add the spring onion and a squeeze of lime juice and cook for the remaining time. Season with salt and pepper

Simmer the broth

  • Meanwhile, heat the large saucepan with 1 tsp olive oil on medium-high heat. Once hot, add the green beans and lemongrass stalk and cook for 4-5 mins, until softened
  • Add the Asian paste, miso paste, ginger & garlic paste and 700ml water (350ml for 1 person). Bring to a boil and simmer for 4-5 mins until reduced slightly
  • Add the carrot ribbons, pak choi and noodles, gently separate with a fork and simmer for 3-4 mins, until cooked. Season the the broth to taste

Plate up

  • Check your prawns are cooked through; they should be opaque, firm and steaming hot
  • Remove the lemongrass stalk from the broth
  • Share the noodles and broth between bowls, topped with the tiger prawns. Garnish with remaining lime wedges
