Teriyaki Beef Stir-fry with Brown Rice, Broccoli & Peppers

This vibrant stir-fry has been designed with the whole family in mind. Simply sizzle tender British beef strips in sweet teriyaki sauce, then dish up alongside fluffy brown rice, sweet pepper, nutty broccoli and crunchy green beans. The best part? You can tailor it to your table: simply boil the broccoli and green beans separately and serve on the side for those who'd like them. Or leave out the peppers and pop as crunchy crudités on the side. It’s a delicious family meal without the effort.

Before you start

  • Pull out 2 large frying pans & a measuring jug

Do the prep

  • Trim the green beans and cut into thirds. Thinly slice the pepper (make it kid friendly: leave the pepper raw and serve as crunchy crudités on the side)
  • Cut the broccoli into small florets, halving any larger pieces. Halve the lime, then cut half into wedges
  • In the jug, dissolve 1 tbsp cornflour in 50ml cold water. Stir in the tamari, teriyaki sauce, the juice from half the lime and 200ml hot water

Fry the beef

  • Heat the large frying pan with 1 tbsp olive oil on medium-high heat. Once hot, add the beef, sprinkle over another 1 tbsp cornflour and cook for 3 mins, until golden brown. Season with salt and pepper
  • Add the pepper, broccoli, green beans and ginger puree. Cook for 2-3 mins, until softened (make it kid friendly: add the broccoli and green beans to a pan of boiling water and boil for 3-4 mins, until cooked, then drain and serve on the side)
  • Stir in the teriyaki sauce and bring to the boil, then simmer for 8 mins, until the beef is cooked through, the veg is tender and the sauce has thickened. Season to taste

Cook the rice

  • Meanwhile, heat the other large frying pan on medium-high heat. Once hot, add the rice and break it up with a wooden spoon. Add a splash of water and a pinch of salt and cook for 2-3 mins, until piping hot. Alternatively, cook in the microwave as per pack instructions

Plate up

  • Check your meat is cooked through; it should be golden brown, steaming hot, the juices should run clear when cut and there should be no pink / rare meat inside
  • Serve the rice into bowls, topped with the teriyaki beef and veg. Garnish with the lime wedges. Sprinkle over the togorashi (for those who'd like the heat)
