Sweet & Sour Turkey with Egg Fried Rice

Before you start

  • Pull out a large bowl, a small bowl & 2 large frying pans or woks

Get sizzlin'

  • Place the turkey in the large bowl and toss with the cornflour, a pinch of salt and pepper
  • Heat a large wok or frying pan with 2 tsp oil on medium-high heat. Once hot, add the turkey and cook for 8 mins, turning occasionally, until golden

Prep & soften the veg

  • Meanwhile, roughly dice the onions. Trim the pak choi and cut into bite-sized pieces
  • Dice the peppers into 2cm squares
  • Add the veg to the turkey pan and cook for 7 mins, until softened

Make the sweet & sour sauce

  • Mix the tamari, ketchup, honey, vinegar and 4 tbsp water in the small bowl
  • Add the sauce to the pan and cook for 2-3 mins, until the turkey is cooked through

Make the egg fried rice

  • Thinly slice the spring onions
  • Heat the other large frying pan with 1 tsp oil on medium-high heat. Once hot, add the spring onions, rice and a splash of water
  • Break the rice up with a wooden spoon, and cook for 2-3 mins, until piping hot
  • Push the rice to one side of the pan. Add 1 tsp oil and crack in the eggs
  • Break up the eggs with a wooden spoon and cook for 1-2 mins, until firm. Stir the eggs into the rice, then season sea salt and pepper.

Plate up

  • Check your turkey is cooked through by cutting a large piece in half; the flesh should be white and the juices running clear
  • Serve the egg fried rice in bowls with the sweet & sour turkey
