Beef Bolognese with Brown Rice Penne, Tenderstem Broccoli & Toasted Pine Nuts

A hearty bolognese, starring fresh tomatoes and sundried tomato paste with British beef mince. Add garlic, basil and parsley paste for Italian flavour. Then toss it all together with wholesome brown rice penne and tenderstem broccoli for greens. Ready in 20 mins!

Before you start

  • Pull out a large frying pan, a large saucepan, a slotted spoon or tongs, a peeler, a measuring jug & a sieve

Prep & toast

  • Finely dice the onion. Dice the carrot into 1cm chunks (peel optional). Halve the tomatoes
  • Heat the large frying pan on medium heat. Once hot, add the pine nuts and toast for 2-3 mins, until golden. Remove from the pan and set aside

Simmer simmer

  • Reheat the frying pan with 2 tsp oil on medium-high heat. Once hot, add the beef, carrot and onion and cook for 7 mins, breaking up the mince with a wooden spoon, until golden brown. Season with salt and pepper
  • Add the sundried tomato paste, tomatoes, garlic herb paste, passata, stock powder and 100ml water (50ml for 1 person)
  • Lower the heat and simmer for 6-7 mins, until the sauce thickens

Cook the penne & broccoli

  • Meanwhile, trim the broccoli
  • Bring the large saucepan filled with salted water to a boil. Once boiling, add the penne and boil for 7-8 mins, until cooked
  • In the final 3-4 mins, add the broccoli and cook for the remaining time, until tender
  • Remove the broccoli with a slotted spoon or tongs, then drain the pasta

Plate up

  • Add the cooked pasta to the beef pan and toss to coat. Season with salt and pepper
  • Share the bolognese pasta between bowls, with the broccoli alongside. Sprinkle over the toasted pine nuts
