  1. Coarsely grate the carrot. Dice the pepper into 1-2cm squares.
  2. Heat a large frying pan with the sesame oil on high heat. Add the pepper and carrot and cook for 3-5 mins, until golden. Trim and rough chop the tat soi. Add the tat soi, turkey, garlic ginger paste, Asian paste, maple syrup and tamari. Cook for 6-8 mins, until the turkey is cooked through.
  3. Add the rice to the pan, breaking it up with a wooden spoon. Cook for 2 mins, or until hot, then remove from the heat and squeeze in the juice of half the lime and season with sea salt to taste.
  4. Check your turkey pieces are cooked through; the meat should be white with the juices running clear.
  5. Finely slice the spring onions. Serve the fried rice on plates and top with chilli paste (to taste) and spring onions. Serve remaining lime as wedges.
