  1. Preheat the oven to 220C / fan 200C / gas mark 7. Cut the potatoes into fries. Place on a lined baking tray and toss with 2 tsp oil, oregano, a pinch of sea salt and black pepper. Roast for 25-30 mins, turning halfway, until soft and golden.
  2. Bring a saucepan filled with salted hot water to a boil. Trim the green beans, then add to the saucepan. Boil for 2-3 mins, until cooked, then drain and set aside. Meanwhile, finely chop or crush the garlic. Halve the tomatoes.
  3. Heat a large frying pan with 1 tbsp oil on high heat. Season the steaks with sea salt and cook (as a guide: 2-3 mins per side for medium-rare, or 4-5 mins per side for well-done). Transfer to plates and leave to rest.
  4. Make the black pepper sauce; reheat the green bean saucepan on medium heat. Add the cream, vinegar, a generous amount of black pepper and 50ml water. Crumble in the stock cube and stir. Simmer for 4 mins, until slightly thickened. Remove from the heat and keep warm.
  5. Reheat the steak pan with 2 tsp oil on medium-high heat. Add the garlic and tomatoes, cook for 1 min, then add the green beans. Cook for 1 min, until softened. Season with sea salt and black pepper.
  6. Serve the steaks, herby fries, tomatoes and green beans with the black pepper sauce.
