  1. Rinse the rice and place in a saucepan with 800ml lightly salted boiling water. Simmer for 25-30 mins, until cooked, then drain.
  2. Heat a large frying pan or wok on a high heat. Peel one orange and add the peel to the pan. Toast for 2-3 mins until the edges blacken slightly, then remove and thinly slice.
  3. Cut the spring onions into 2cm lengths. Peel and finely chop or grate the ginger. On a plate mix together the cornflour and garlic powder. Season with sea salt and black pepper. Add the diced chicken and coat the pieces really well.
  4. Keep the pan over a high heat with 1 tbsp oil and add the chicken, toasted orange, ginger and spring onion. Fry for 3-4 mins until the chicken is browned. Add tamari, honey, vinegar and sesame oil, then squeeze in the juice from both oranges. Simmer on a medium heat for 10 mins, then add the choi sum and cook for another 3-4 mins until softened.
  5. Check your chicken is cooked through by cutting a large piece in half; the flesh should be white and the juices running clear. Cook for longer if necessary. Add the rice to plates alongside the orange chicken and veg. Pour over any sauce, garnish with sesame seeds and serve.
