Crispy Sesame Tofu with Veggie Fried Rice

This Japanese-inspired dish is big on flavour. There's crispy, golden tofu - crusted in sesame and furikake seasoning. A sticky tamari-ginger sauce for drizzling. And fibre-filled brown rice, sizzled with that delicious sauce, plus sugar snaps and pak choi for greens.

Before you start

  • Bring a large saucepan filled with salted water to the boil
  • Pull out a small bowl, a medium mixing bowl, a sieve, a grater, a medium frying pan & a large frying pan

Cook the rice & prep

  • Add the rice to the saucepan and boil for 25-30 mins, until cooked, then drain
  • Meanwhile, cut the pak choi into bite-sized pieces. Thinly slice the pepper
  • Finely grate the garlic and ginger. Halve the lime

Coat the tofu & make the sauce

  • Drain the tofu and pat dry with paper towel. Slice into 1cm wide strips
  • Place the cornflour, sesame seeds and half the furikake in the medium mixing bowl with a pinch of salt and mix to combine. Add the tofu strips and toss to coat evenly
  • Mix the tamari, maple syrup, a squeeze of lime juice, remaining furikake, half the ginger and half the garlic in the small bowl

Golden tofu

  • Heat the medium frying pan with 1 tbsp oil on medium-high heat. Once hot, add the tofu and cook for 8-10 mins, turning occasionally, until golden brown

Make the veggie fried rice

  • Heat the large frying pan with 1 tbsp oil on medium heat. Once hot, add the remaining ginger and garlic and cook for 1 min
  • Add the pepper, pak choi and sugar snaps. Cook for 3-4 mins, until softening
  • Stir in the cooked rice and half the sauce. Add a squeeze of lime juice and toss to combine

Plate up

  • Serve the veggie fried rice topped with the sesame tofu. Drizzle with the remaining sauce
  • Serve any remaining lime, cut into wedges
