Speedy Indian Pork Stir-Fry with Quinoa

This speedy pork stir-fry, featuring your favourite Indian flavours, is ready in 3 simple steps. Sizzle free-range British pork strips with garam masala, tikka paste and plenty of ginger and garlic. Fluffy quinoa to soak up all the flavour. Tomatoes and leafy spinach to pack in the veg.

Before you start

  • Boil a half-full kettle
  • Pull out a medium frying pan

Prep the veg

  • Thinly slice the onion into 6 wedges
  • Dice the pepper into 3cm pieces

Get sizzlin'

  • Heat a medium frying pan with 1 tbsp oil on high heat. Once hot, add the pork, onion, pepper and whole tomatoes
  • Cook for 5 mins, until the pork is golden brown all over. Season with salt

Build the dish

  • Add the ginger & garlic paste, tikka paste, tomato puree and garam masala to the pan
  • Cook for 3 min, then add the quinoa, spinach and 50ml boiling water (25ml for 1 person)
  • Cook for 3-4 mins, until the pork is cooked through and the quinoa is piping hot

Plate up

  • Check your meat is cooked through; it should be golden brown, steaming hot, the juices should run clear when cut and there should be no pink / rare meat inside
  • Add a squeeze of lemon juice and season with salt and pepper
  • Spoon the pork and quinoa into bowls and garnish with the remaining lemon, cut into wedges
