  1. Boil a kettle. Rinse the rice and place in a saucepan with 600ml salted boiling water. Simmer for 20-25 mins. Add the peas for the final 5 mins of cooking.
  2. Finely chop the red onion and garlic. Peel and thinly slice the carrot into half-moons on an angle. Slice the spring onion on an angle. Finely chop the chilli (remove the seeds for less heat). Roughly chop the coriander. Drain the sweetcorn.
  3. When the rice is nearly ready, heat a large frying pan with 1 tsp oil on a medium-high heat. Add the red onion, garlic, chilli, carrot, and just half the coriander. Cook for 5 mins, then add the egg and cook for two mins.
  4. Meanwhile, drain the rice and peas, then add to the pan with the sweetcorn, tamari and sesame oil. Cook for 5 mins, then add the prawns and cook for a further 2-3 mins to heat through.
  5. Serve the special fried rice garnished with the spring onions and remaining coriander.
