Japanese-inspired Beef & Broccoli Bowl

A Japanese-inspired beef dish packed with umami. Pair free-range British mince with seaweed flakes, vinegar, ginger and garlic. Sizzle with chunks of carrots till tender and oozing with flavour. Tenderstem broccoli on the side brings the green. Fibre-dense brown rice fills you up.

  1. Boil a kettle. Make the sauce; in a small bowl, combine the tamari, honey, vinegar, garlic paste and ginger paste. Cut the spring onions into 2cm pieces. Trim and halve the broccoli.
  2. Make the broth. Heat a large saucepan on high heat. Add the spring onions, half the sauce, half the furikake and 500ml boiling water. Stir the cornflour into 50ml cold water, then add to the saucepan. Stir and cook for 4-5 mins. Add the broccoli and cook for another 4-5 mins.
  3. Make the beef mixture. Dice the carrots into 1cm cubes (peel optional). Heat a medium frying pan with the sesame oil on high heat. Add the carrots and cook for 1-2 mins, until golden brown. Add the beef and remaining sauce and cook for 4-5 mins, until the beef is cooked through.
  4. Transfer the beef mixture to serving bowls. Pour any remaining cooking liquid into the broth. Reheat the frying pan to medium-high heat. Add the rice and break it up with a wooden spoon. Add a splash of water and cook for 2-3 mins, until piping hot.
  5. Serve the rice and broccoli alongside the beef, then pour over the broth. Garnish with the remaining furikake.
