  1. Bring a large saucepan filled with salted hot water to a boil. Add the rice and boil for 25-30 mins, until cooked, then drain.
  2. Roughly dice the onion. Heat a large frying pan with 1 tbsp oil on medium-high heat. Add the onion and cook for 4-6 mins, until softened. Trim and cut the green beans into thirds. Dice the pepper into 2cm chunks. Remove the thyme leaves from their stalks. Add the pepper and thyme to the pan and cook for 3-4 mins.
  3. Stir in the curry powder then add the whole tomatoes, green beans, tomato paste, beef (and its juices), half the chilli paste, the stock powder and 200ml water. Simmer for 7-10 mins until the beef is hot and the liquid has thickened.
  4. Stir in the cooked rice and season with sea salt before serving in bowls. Drizzle with remaining chilli paste to taste.
