Sirloin Medallion Steak with Horseradish Sauce & Truffle Chips

Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9
  • Line a baking tray with parchment paper
  • Pull out a large frying pan, a grater & a small bowl

Golden chips

  • Remove the steaks from the fridge and allow to come to room temperature. Season both sides with salt and pepper
  • Cut the potatoes into chips, then place onto the lined baking tray and toss with 1 tsp oil and a pinch of salt and pepper
  • Roast for 25-30 mins, until soft and golden

Do the prep & make the horseradish sauce

  • Trim the broccoli and green beans. Finely grate the cheese
  • In the small bowl, combine the yoghurt and horseradish puree with a generous pinch of salt and pepper

Sizzle the steak

  • Heat the large frying pan with 1 tsp oil on medium-high heat. Once hot, add the steaks and cook (as a guide: cook for 2-3 mins on each side for medium-rare, or 5-7 mins for well done)
  • Quickly sear the edges of the steaks, then remove from the pan and leave to rest. Cover to keep warm

Cook the greens & finish the chips

  • Reheat the frying pan with 1 tsp oil on medium heat. Once hot, add the broccoli and green beans and cook for 3-4 mins, until golden. Season with salt and pepper
  • Add 1 tbsp water (1/2 tbsp for 1 person) and steam for 2-3 mins, until softened
  • When the chips have 5 mins remaining, sprinkle with half the cheese and return to the oven until the cheese is melted

Plate up

  • Slice the steaks against the grain, then share between plates, with the chips, steamed greens and rocket alongside
  • Sprinkle the truffle zest over the chips and steaks. Sprinkle the remaining cheese over the greens. Spoon 2 tbsp of the sauce over each steak, serving the remaining sauce alongside
