Before you start

  • Bring a medium saucepan filled with salted water to a boil
  • Pull out a medium frying pan, a small frying pan, a small bowl, a sieve & a measuring jug

Boil the rice & make the garlic yoghurt

  • Add the rice to the saucepan and boil for 25-30 mins, until cooked, then drain
  • Meanwhile, finely chop or crush the garlic
  • Heat the medium frying pan with 1/2 tsp olive oil on medium-high heat. Once hot, add half the garlic and cook for 30 secs, then transfer to the small bowl. Stir in the yoghurt and season with salt and pepper. Add a splash of water to loosen to a drizzling consistency

Prep the rest

  • Trim the green beans. Finely dice the onion. Thinly slice the pepper. Roughly chop the parsley

Build the stew

  • Reheat the frying pan with 1 tsp olive oil on medium-high heat. Once hot, add the onion and pepper and cook for 3 mins. Season with salt and pepper
  • Add the pork and cook for 4 mins, until golden, then stir in the paprika oregano blend and remaining garlic and cook for a further 1 min
  • Add the passata, sundried tomato paste, stock and 150ml water (75ml for 1 person) and simmer for 7 mins, until the pork is cooked through. Season to taste with salt and pepper

Time for green beans

  • Heat the small frying pan with 1/2 tsp olive oil on medium-high heat. Once hot, add the green beans and cook for 3-4 mins, until starting to char
  • Add the almonds and cook for a further 1 min, until toasted, then add 1 tbsp water (1/2 tbsp for 1 person) and steam for 2-3 mins, until softened. Toss through half the parsley and season with salt and pepper

Plate up

  • Check your meat is cooked through; it should be golden brown, steaming hot, the juices should run clear when cut and there should be no pink / rare meat inside
  • Share the pork stew between bowls, with the rice and green beans alongside. Drizzle with the garlic yoghurt and garnish with the remaining parsley to finish
