Pork Meatball Rogan Josh with Brown Rice & Mint Cucumber Raita

A not-so-classic version of Rogan Josh. Sizzle free-range pork meatballs, flavoured with ginger and garlic, till golden and juicy. Simmer in a rich tomato sauce infused with fragrant garam masala. Serve with brown rice for fibre. A dollop of creamy mint cucumber raita to complete the dish.

Before you start

  • Bring a large saucepan filled with salted water to a boil
  • Pull out another large saucepan, a large bowl, a small bowl, a sieve, a measuring jug & a grater

Get the rice on

  • Add the rice to the saucepan of boiling water and boil for 25-30 mins, until cooked, then drain

Make the meatballs

  • In the large bowl, combine the pork with the ginger & garlic paste and a pinch of salt and pepper. Mix and form into 16 meatballs
  • Heat the other large saucepan with 1 tbsp oil on medium-high heat. Once hot, add the meatballs and cook for 3 mins, turning frequently, until golden brown

Simmer the rogan josh

  • Finely dice the onion, then add to the meatball pan and cook for 2 mins
  • Add the garam masala and cinnamon, cook for 30 secs, then add the stock powder, chopped tomatoes, ketchup and 200ml hot water and bring to a boil
  • Simmer for 14 mins, until the sauce thickens and the pork is cooked through

Make the mint cucumber raita

  • Meanwhile, pick the mint leaves from the stalks and roughly chop (saving a few whole leaves for garnish)
  • Coarsely grate the cucumber, then squeeze out the water
  • In the small bowl, mix together the cucumber, chopped mint, half the yoghurt and a pinch of salt

Last bits & plate up

  • Quarter the fresh tomatoes, then add to the meatball pan
  • Cook for 2-3 mins, until the meatballs are cooked through. Stir in the remaining yoghurt and season with salt
  • Check your meat is cooked through; it should be golden brown, steaming hot, the juices should run clear when cut and there should be no pink / rare meat inside
  • Serve the meatball rogan josh into bowls, with the rice and mint cucumber raita alongside. Garnish with the reserved mint leaves
