Pork Meatball Rogan Josh with Brown Rice & Mint Cucumber Raita

A not-so-classic version of Rogan Josh. Sizzle free-range pork meatballs, flavoured with ginger and garlic, till golden and juicy. Simmer in a rich tomato sauce infused with garam masala spices. Serve with nutty brown rice. A dollop of cooling cucumber raita for balance.

Before you start

  • Bring a medium saucepan filled with salted water to a boil
  • Pull out a large saucepan, a large bowl, a medium bowl, a sieve, a measuring jug & a grater

Get the rice on & prep

  • Add the rice to the saucepan of boiling water and boil for 25-30 mins, until cooked, then drain
  • Finely dice the onion. Halve the tomatoes

Make the meatballs

  • In the large bowl, combine the pork with the ginger & garlic paste and a pinch of salt and pepper. Mix and form into 10 meatballs (5 for 1 person)
  • Heat the large saucepan with 1 tsp oil on medium-high heat. Once hot, add the meatballs and onion and cook for 5 mins, until golden and softening

Simmer the rogan josh

  • Add the garam masala and nutmeg, cook for 30 secs, then add the passata, ketchup, stock powder and 150ml hot water (75ml for 1 person). Simmer for 10 mins
  • Add the tomatoes and simmer for a further 4 mins, until the sauce thickens and the meatballs are cooked through

Make the cucumber raita

  • Pick the mint leaves from the stalks and roughly chop (save some whole leaves for garnish). Coarsely grate the cucumber and squeeze out any excess juice
  • In the medium bowl, mix together the cucumber, chopped mint, half the yoghurt and a good pinch of salt. Set aside

Last bits & plate up

  • Check your meat is cooked through; it should be golden brown, steaming hot, the juices should run clear when cut and there should be no pink / rare meat inside
  • When ready, remove the meatball pan from the heat, stir in the remaining yoghurt and season to taste with salt and pepper
  • Share the meatball rogan josh between bowls, with the rice and cucumber raita alongside. Garnish with the reserved mint leaves
