Pork Steak & Fried Egg with Chips, Tenderstem Broccoli & Homemade Ketchup

Transform ham, egg and chips into a healthy weeknight winner. Sizzle free-range British pork loins till golden on the outside and juicy in the middle. Serve alongside fluffy chips, a gooey fried egg and broccoli to up the veg. To top it off? A homemade ketchup featuring juicy seasonal tomatoes.

Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9 / air fryer 200C
  • Line 2 baking trays with parchment paper
  • Pull out a large saucepan, a medium saucepan, a medium frying pan & a sieve

Make the chips

  • Cut the potatoes into chips, then place onto a baking tray and toss with 1/2 tbsp oil. Season with a pinch of salt and pepper, then bake for 25-30 mins / air fryer 20-25 mins, until soft and golden

Time for ketchup

  • Halve the tomatoes. Finely slice the shallots
  • Heat the medium saucepan with 1 tsp oil on medium heat. Once hot, add the tomatoes and shallot to the saucepan, along with the vinegar, honey, tamari and the half pack of cinnamon. Add a splash of water, then season with salt and pepper
  • Simmer for 15-20 mins, until the tomatoes have broken down and reduced to a thick sauce

Cook the pork

  • Meanwhile, heat the medium frying pan with 1 tbsp oil on medium-high heat. Once hot, add the pork and season with salt and pepper. Cook for 6 mins per side, until golden brown
  • Transfer the pork to the other lined tray and bake for 8 mins / air fry 6 mins, until cooked through

Fry the eggs

  • Reheat the frying pan with 1/2 tbsp oil on medium-high heat. Crack in the eggs and cook for 2-3 mins, until the whites have set and the yolks are runny. Season with salt and pepper

Boil the broccoli & plate up

  • Trim the broccoli. Bring the large saucepan filled with salted hot water to a boil. Add the broccoli and boil for 3-4 mins, until cooked, then drain
  • Check your meat is cooked through; it should be golden brown, steaming hot, the juices should run clear when cut and there should be no pink / rare meat inside
  • Serve the pork steaks onto plates, along with the chips and broccoli. Top with the fried egg. Spoon over a generous dollop of tomato ketchup
