Before you start

  • Preheat the oven to 240C / fan 220C / gas 9 / air fryer 200C
  • Line a baking tray with parchment paper
  • Pull out a medium frying pan, a medium saucepan, a small saucepan, a slotted spoon & a sieve

Get the potatoes on

  • Cut the potatoes into wedges
  • Place the wedges onto the lined baking tray and drizzle with 1 tsp oil and season with salt and pepper
  • Roast for 25-30 mins / air fryer 20-25 mins

Make the ketchup

  • Halve the tomatoes. Finely dice the shallot
  • Heat the medium saucepan on medium-low heat. Once hot, add the tomatoes and shallot, along with the vinegar, honey, tamari and the half pack of cinnamon. Add a splash of water, then season with salt and pepper
  • Simmer for 15-20 mins, until the tomatoes have broken down and reduced to a thick sauce

Get sizzlin'

  • Heat the medium frying pan with 1 tsp oil on medium-high heat
  • Season the pork with salt and pepper. Once the pan is hot, add the pork and cook for 6 mins on each side, until golden brown
  • Add to the tray with the potato wedges and roast for 8 mins / air fry 6 mins mins, until cooked through

Last bits

  • Bring the small saucepan filled with salted water to a boil
  • Rinse the egg, then carefully lower into the pan using a spoon. Boil for 7 mins, then remove with a slotted spoon and run under cold water
  • Keep the water on the boil. Trim the green beans
  • Add the green beans to the pan and boil for 3-4 mins, until cooked. Drain, then season with salt and pepper

Plate up

  • Check your meat is cooked through; it should be golden brown, steaming hot, the juices should run clear when cut and there should be no pink / rare meat inside
  • Carefully peel and halve the egg
  • Share the pork between plates, with the potato wedges and green beans alongside. Top with the egg. Serve with a generous dollop of ketchup
