Satay Turkey Noodles with Stir-fried Veg & Spring Onions

Before you start

  • Pull out a large frying pan or wok, a large saucepan, a measuring jug, a sieve & a peeler

Get sizzlin'

  • Heat the large frying pan or wok with 2 tsp oil on medium-high heat. Once hot, add the turkey and cook for 15 mins, stirring frequently, until golden brown and cooked through. Season with salt and pepper

Prep the veg & satay sauce

  • Meanwhile, thinly slice the pepper. Cut the broccoli into small florets. Peel the carrots into ribbons
  • In the jug, combine 200ml hot water with the peanut butter. Mix until smooth, then stir in the tamari, honey, ginger & garlic paste and the juice from the lime
  • Add the curry powder to the turkey, toss to coat and cook for another 1 min, then remove from the pan and set aside

Cook the noodles

  • Meanwhile, bring the large saucepan filled with salted water to a boil. Once boiling, add the noodles, gently separate with a fork and boil for 6-7 mins, until cooked. Drain, then rinse under cold water
  • Reheat the frying pan with 1 tbsp oil on medium-high heat. Once hot, add the broccoli, carrot and pepper and cook for 5-6 mins, until softening. Season with salt and pepper

Bring everything together

  • Thinly slice the spring onions
  • Add the cooked turkey, noodles and half the spring onion to the pan. Pour in the satay sauce and toss to combine. Simmer for 2-3 mins, until hot and thickened

Plate up

  • Check your turkey is cooked through by cutting into a large piece; the flesh should be white and the juices running clear
  • Serve the satay turkey noodles into bowls, with the remaining spring onion scattered on top
