Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9
  • Line a baking tray with parchment paper
  • Pull out a large frying pan, a small bowl & a grater

Get started

  • Dice the potato into 3cm chunks, then add to the lined baking tray. Drizzle with 1 tsp oil, a pinch of salt and pepper. Roast for 25-30 mins, until soft and golden

Turkey time

  • Place the turkey breasts between 2 sheets of baking paper and use a rolling pin to flatten to an even 2cm thickness. Heat the large frying pan with 1 tsp oil on medium heat. Once hot, add the turkey and fry for 6 mins on each side, until golden brown
  • Meanwhile, finely grate the ginger, then add to the small bowl with the miso paste, hot honey, rice vinegar and a pinch of salt and pepper. Mix well
  • In the final 30 secs, add the marinade to the pan and turn to coat the turkey, then transfer to one side of the baking tray and roast for 11 mins, until cooked through

Stir fry the veg

  • Trim and cut the broccoli into thirds. Thinly slice the garlic and spring onion, keeping the green and white parts separate
  • Reheat the large frying pan with 1 tsp oil on medium-high heat. Once hot, add the tenderstem and cook for 3-4 mins. Add the garlic, spring onion whites and sugar snap peas and cook for a further 2-3 mins, until the veg is tender. Season with salt and pepper
  • When ready, stir through half the sesame seeds

Plate up

  • Check your turkey is cooked through by inserting a skewer into the thickest part of the meat; the juices should run clear
  • Share the turkey, sweet potato and greens between plates. Drizzle over any remaining miso sauce from the baking tray, then sprinkle with the spring onion greens and remaining sesame seeds to finish
