Miso Ginger Turkey with Roast Sweet Potato & Sesame Garlic Greens

This recipe is designed to be more nutrient dense, and packed into a smaller portion. Tender British turkey is coated in fragrant ginger, umami miso and sticky honey, then roasted alongside bright sweet potatoes. On the side? Crunchy sugar snap peas and nutty Tenderstem broccoli, sauteed with garlic and sesame seeds. Delish!

Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9
  • Line a baking tray with parchment paper
  • Pull out a large frying pan, a small bowl, a rolling pin & a grater

Get started

  • Dice the sweet potato into 3cm chunks, then add to one side of the lined baking tray. Toss with 1 tsp olive oil, salt and pepper. Roast for 25-30 mins, until soft and golden

Turkey time

  • Place the turkey breasts between 2 sheets of baking paper and use a rolling pin to flatten to an even 2cm thickness. Heat the large frying pan with 1 tsp olive oil on medium heat. Once hot, add the turkey and fry for 6 mins on each side, until golden brown
  • Meanwhile, finely grate the ginger, then add to the small bowl with the miso paste, honey, rice vinegar, salt and pepper. Mix well
  • In the final 30 secs, add the miso ginger sauce to the pan and turn to coat the turkey
  • Transfer the turkey the other side of the sweet potato tray and roast for 11 mins, until cooked through

Stir-fry the greens

  • Trim and cut the broccoli into thirds. Thinly slice the garlic and spring onions, keeping the green and white parts separate
  • Reheat the frying pan with 1 tsp olive oil on medium-high heat. Once hot, add the broccoli and cook for 3-4 mins
  • Add the garlic, spring onion whites, sugar snap peas and half the sesame seeds. Cook for a further 2-3 mins, until softened. Season with salt and pepper

Plate up

  • Check your turkey is cooked through by inserting a skewer into the thickest part of the meat; the juices should run clear
  • Share the turkey between plates, with the sweet potato and greens alongside
  • Drizzle over any remaining miso sauce from the baking tray, then sprinkle with the spring onion greens and remaining sesame seeds
