'Marry Me' Free-range Chicken Pasta with Apple Salad

Our take on the viral 'Marry Me' chicken. Starring our tender British free-range chicken breast, simmering away in a luscious sauce, with fresh baby tomatoes, herby oregano a decadent cashew cream. Toss through our brown rice fusilli to soak up all the flavour. Serve with a fresh apple salad for the perfect bite.

Before you start

  • Bring a large saucepan filled with salted water to a boil
  • Pull out a large frying pan, a medium bowl, a sieve & a measuring jug

Sizzle the chicken

  • Thinly slice the onion. Thinly slice or crush the garlic
  • Add one-quarter of the onion to the medium bowl with half the vinegar. Season with salt and pepper, toss to coat and set aside
  • Heat the large frying pan with 2 tsp oil on medium-high heat. Once hot, add the chicken and remaining onion and cook for 4 mins, until golden. Season with salt and pepper

Get boiling

  • Meanwhile, trim and cut the green beans into thirds. Halve the tomatoes
  • Add the fusilli to the saucepan and boil for 10-11 mins, until cooked. In the final 3 mins, add the green beans
  • Reserve 100ml of pasta water (50ml for 1 person), then drain

Simmer simmer

  • Add the tomatoes and garlic to the chicken pan and cook for 1 min
  • Stir in the half bottle of cashew cream, the sundried tomato paste, oregano, half the mustard, the remaining vinegar and the reserved pasta water. Bring to the boil, then lower the heat and simmer for 13 mins, until the chicken is cooked through and the sauce has thickened

Simmer the sauce

  • Thinly slice the half apple
  • When ready, add the cooked pasta and green beans to the chicken pan and toss to coat in the sauce. Season with salt and pepper

Build the apple salad & plate up

  • Add the remaining mustard and 1 tsp oil to the onion bowl. Mix well, then add the sliced apple and salad leaves. Toss to coat
  • Check your chicken is cooked through by cutting a large piece in half; the flesh should be white and the juices running clear
  • Share the 'marry me' chicken pasta between bowls, with the salad alongside
