Sesame Salmon Lettuce Cups

A meal where the only thing that needs cleaning - is your hands. Bung vitamin C-rich sweet potato wedges into the oven till golden and crispy. Slice the peppers and flake tender hot-smoked salmon. Lettuce cups are the vehicle to build the perfect bite. Don't forget to drizzle the hot honey and sesame dressing.

  1. Preheat the oven to 240C / fan 220C / gas mark 9. Cut the sweet potatoes into wedges (peel optional). Place onto a lined baking tray and toss with 1/2 tbsp oil, a pinch of sea salt and black pepper. Bake for 20-25 mins, until soft and golden.
  2. Dice the mango into small cubes. Thinly slice the peppers and spring onions. Trim the lettuce and carefully separate the leaves. Quarter the lime.
  3. Make the dressing. In a small bowl, combine tamari, honey, juice from 2 lime wedges, sesame seeds and 1 tsp oil. Flake the salmon into another medium bowl and drizzle over half the dressing.
  4. Sprinkle the sweet potato wedges with seaweed flakes. Serve the lettuce, salmon, peppers, mango and spring onions on the table in small bowls. Serve the remaining dressing and lime wedges on the side. Build your own lettuce cups at the table.
