Slow-cooked Pulled Pork with Jacket Potatoes, Cabbage Slaw & Fresh Tomato Salsa

Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9 / air fryer 200C
  • Line a baking tray with parchment paper
  • Pull out a medium saucepan, a large bowl, a medium bowl, a measuring jug & a grater or julienne peeler

Bake the potatoes

  • Halve the potatoes, then score a deep cross into the flesh (careful not to cut all the way through)
  • Place onto the lined baking tray, skin-side up, and drizzle with 2 tsp oil. Season with salt and pepper
  • Bake for 30-35 mins / air fryer 25-30 mins, until the skins are golden and the middles are completely soft

Prep time

  • Trim and finely slice the cabbage. Coarsely grate or julienne the carrots (peel optional). Thinly slice the spring onions. Deseed and thinly slice the chilli. Halve the limes. Quarter the tomatoes

Make the slaw & salsa

  • Add the cabbage, carrot and chilli (for those who'd like the heat) to the large bowl, along with the yoghurt, juice from 1 lime and a good pinch of salt and pepper. Mix to combine and set aside
  • In the medium bowl, combine the tomatoes, spring onion and juice from the remaining lime. Add 1 tsp olive oil and a pinch of salt, then mix and set aside

Simmer the slow-cooked pork

  • Heat the medium saucepan with 1 tsp oil on medium heat. Once hot, add the paprika and cook for 1 min, then add the pork (and all its juices from the bag), the ketchup, tamari, honey and 100ml water
  • Gently pull apart any larger pieces of pork and simmer for 8-10 mins, until the sauce thickens, stirring occasionally. Season with salt and pepper

Plate up

  • Serve the jacket potatoes onto plates, topped with the pulled pork. Serve the slaw and salsa alongside
