  1. Boil the kettle. Fill a pot of water from the kettle and bring to the boil, add the noodles, stir and remove from the heat, leave to stand for 5 mins.
  2. Make the sauce. In a bowl, mix together the paprika, miso, tamari, vinegar and honey. Set aside.
  3. Beat the egg in a bowl. Heat a medium non-stick frying pan with 1 tsp oil on a medium-high heat. Add the egg and cook for 1-2 mins on each side, until golden and cooked through. Slide onto a board, roll up and slice into strips. Set aside for later.
  4. Thinly slice the pepper. Peel and cut the carrot into matchsticks. Thinly slice the spring onion. Reheat the frying pan with 1 tsp oil on a medium-high heat. Add the pepper and saute for 2-3 mins, then transfer to a plate.
  5. Keeping the pan on the heat, add 1 tsp oil and the turkey mince. Cook for 5 mins, until cooked through. Add the sauce and carrot and cook for a further minute before adding the spring onion, pepper and noodles. Heat through for 1-2 mins, when ready add the egg strips before serving.
  6. To serve, spoon the noodles onto a plate and garnish with kimchi and furikake.
