Coronation Turkey with Apricots & Quinoa

Move over, coronation chicken – because our coronation turkey is in town. Sweet dried apricots, flaky almonds, curry powder and coconut milk meet British turkey breast, greens and lime in a dish fit for royalty.

  1. Bring a large saucepan filled with salted hog water to a boil. Add the quinoa and boil for 13-14 mins, until cooked, then drain.
  2. Heat a medium frying pan with 2 tsp oil on medium heat. Add the turkey, then season with sea salt and black pepper. Cook for 8-10 mins, until golden and cooked through.
  3. Roughly chop the coriander. Halve the tomatoes. Add the curry powder, apricots and coconut milk to the pan. Cook for 2 mins, then add the tomatoes, spinach and coriander. Simmer for 2 mins, then remove from the heat. Stir through the almonds and season with sea salt and black pepper.
  4. Squeeze the juice from half the lime over the cooked quinoa. Check your turkey is cooked through by inserting a skewer into the thickest part of the meat; the juices should run clear. Cook for longer if necessary.
  5. Serve the quinoa with the turkey. Squeeze over the juice from the remaining lime (to taste).
