Jerk-spiced Turkey Burger with Lime & Mango Salad

  1. Preheat the oven to 240C / fan 220C / gas mark 9/ air fryer 190C. Cut the sweet potato into wedges. Place onto a lined baking tray, toss with 2 tsp oil and season with a pinch of sea salt and black pepper. Roast for 20-25 mins/ air fryer 15-20 mins, until soft and golden.
  2. Make the turkey burgers; finely dice the shallot. Finely chop the coriander. Crack the egg into a mixing bowl and whisk until smooth. Add the turkey mince, half the coriander and half the shallot to the bowl. Add the jerk seasoning, along with a pinch of sea salt and black pepper. Mix well, then shape into 4 burger patties (2 for 1 person).
  3. Heat a large frying pan with 2 tsp oil on medium heat. Add the burgers and cook for 5-8 mins per side, until golden and cooked through. Check your turkey is cooked through; the meat should be white with the juices running clear. Cook for longer if necessary.
  4. Make the salad; halve the tomatoes. Dice the mango into 1cm cubes. Zest and half the lime. Drain and rinse the beans. Place the beans, tomatoes, and mango into a medium bowl with the remaining coriander and shallot. Add the juice from half the lime (or to taste), the lime zest, 2 tsp olive oil and a pinch of sea salt. Mix well to combine.
  5. Serve the turkey burgers on plates with the rocket, sweet potato wedges and bean salad. Garnish with the remaining lime, cut into wedges.
