Jerk-spiced British Turkey Burgers with Lime & Mango Salad

Jamaican Jerk spices go perfectly with our juicy, homemade British turkey burgers. You'll shape them into patties, then sizzle til golden. Dish up with chunky sweet potato wedges. Plus, a refreshing mango, lime and black bean salad. Happy days!

Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9 / air fryer 190C
  • Line a baking tray with parchment paper
  • Pull out a large bowl, a medium bowl, a whisk, a grater, a peeler & a large frying pan

Golden sweet potatoes

  • Cut the sweet potatoes into wedges
  • Place onto the lined baking tray and toss 1 tbsp oil and a pinch of salt and pepper
  • Roast for 25-30 mins / air fryer 20-25 mins, until soft and golden

Make the burgers

  • Finely dice the shallots. Finely chop the coriander. Grate the courgette. Zest and halve 1 lime, then quarter the other
  • Crack the egg into the large bowl and whisk until smooth. Add the turkey, Jerk seasoning, courgette, half the shallot and half the coriander to the bowl. Season with salt and pepper. Mix and shape into 8 burger patties

Get sizzlin'

  • Heat the large frying pan with 1 tbsp oil on medium heat. Once hot, add the burgers and cook for 7 mins, then flip and cook for another 6 mins, until cooked through (cook in batches if necessary)

Make the salad

  • Halve the tomatoes. Peel and dice the mango into 2cm chunks. Drain and rinse the beans
  • Place everything into the medium bowl with the remaining coriander and shallot. Add the zest and juice from 1 lime (or to taste), 1 tbsp oil and a pinch of salt. Mix to combine

Plate up

  • Check your turkey is cooked through; the meat should be white with the juices running clear
  • Serve the turkey burgers on plates, with the rocket, sweet potato wedges and salad alongside. Garnish with the lime wedges
