Jerk Pork Steaks with Sweet Potato Wedges & Mango Slaw

Free-range British pork steaks simmer away in a medley of fragrant spices. To the sticky and sweet sauce, we add juicy tomatoes, sticky honey and vinegar for tang. Dish up with golden sweet potatoes wedges and a vibrant slaw of crunchy sweetheart cabbage and juicy mango. It's a true weeknight feast!

Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9 / air fryer 190C
  • Line a baking tray with parchment paper
  • Pull out a medium frying pan, a large bowl, a measuring jug & a peeler

Get the wedges on

  • Cut the sweet potato into wedges (peel optional)
  • Place onto the lined baking tray and toss with 1 tsp oil and a pinch of salt and pepper
  • Roast for 25-30 mins / air fryer 20-25, until soft and golden

Build the dish

  • Thinly slice the spring onions
  • Heat the medium frying pan with 2 tsp oil on high heat. Once hot, add the pork and cook for 4 mins per side, until golden
  • Add the Jerk seasoning and tomato puree and cook for 1 min, then stir in the whole tomatoes, half the spring onion, half the honey and 250ml water (125ml for 1 person). Season with salt and pepper
  • Simmer for 11 mins, until the sauce thickens and the pork is cooked through

Make the mango slaw

  • Meanwhile, peel and dice the half mango into 1cm chunks. Trim and thinly slice the cabbage
  • Add both to the large bowl, along with the vinegar, remaining honey and spring onion. Season with salt and pepper
  • Finely chop the coriander. Stir half the coriander into the pork pan and add the remaining to the slaw. Toss to combine

Plate up

  • Check your meat is cooked through; it should be golden brown, steaming hot, the juices should run clear when cut and there should be no pink / rare meat inside
  • Deseed and thinly slice the half chilli
  • Share the Jerk pork between plates, with the slaw and sweet potato wedges alongside. For those who'd like extra heat, garnish with the chilli
