Jerk Jackfruit and Beans with Plum Spicy Rice

  1. Boil a kettle. Heat a large saucepan filled with salted boiling water on a high heat. Trim the green beans and cut into 2cm lengths. Add the rice and boil for 25-30 mins, adding the green beans for the final 2-3 mins, until cooked, then drain.
  2. Dissolve the stock cube in a jug with 350ml boiling water. Half and destone the plums. Cut each half into quarters. Slice the spring onions into 1cm lengths. Heat a large frying pan with 3 tbsp oil on a medium-high heat and cook the onions, whole tomatoes and half the plums for 4-5 mins, until softened.
  3. Drain the jackfruit and add it to the pan. Break it up then add the maple, jerk seasoning, allspice, tomato puree and the stock. Season with sea salt and black pepper then simmer for 15-20 mins until the sauce thickens slightly.
  4. Roughly chop the coriander. Drain and rinse the beans. Once done, add half the coriander to the drained rice and half to the sauce. Stir the beans and the remaining plums into the rice and spoon onto serving plates. Add the jerk jackfruit alongside the rice and serve.
