Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9 / air fryer 190C
  • Line a baking tray with parchment paper
  • Pull out a large frying pan, a small saucepan, a sieve & a measuring jug

Get the fries in the oven

  • Cut the potatoes and carrots into fries (peel optional)
  • Place both onto the lined baking tray and toss with 1 tbsp oil and a pinch of salt and pepper
  • Roast for 25-30 mins / air fryer 20-25 mins, until soft and golden

Jackfruit time

  • Drain and rinse the jackfruit. Thinly slice the shallot. Finely chop or crush the garlic. Drain the sweetcorn. Roughly chop the coriander
  • Heat the large frying pan with 1 tbsp oil on medium-high heat. Once hot, add the shallot and corn and cook for 4-5 mins, until softened and golden. Season with salt and pepper
  • Add the Cajun spice and the garlic and cook for 1 min
  • Add the jackfruit and cook for 3 mins, breaking the jackfruit up with a wooden spoon

Simmer simmer

  • Stir in the passata, stock powder and 100ml hot water (50ml for 1 person) to the pan
  • Bring to a boil, then simmer for 8-10 mins, until the sauce thickens. Season to taste

Make the cashew sauce

  • Heat the small saucepan on medium-high heat. Once hot, add the cashew cream and nutritional yeast
  • Bring to a boil and simmer for 1 min, stirring constantly, until thickened slightly. Season generously with salt and pepper

Plate up

  • Share the fries between plates, topped with the Cajun jackfruit. Drizzle with the cashew sauce and garnish with the coriander
