Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9
  • Line a baking tray with parchment paper
  • Pull out a medium frying pan, a sieve & a measuring jug

Get started

  • Heat the medium frying pan with 1/2 tsp oil on medium-high heat. Once hot, add the chicken and cook for 4 mins per side. Season with salt and pepper
  • Meanwhile, trim and slice the leek into 1cm half-moons. Thinly slice the garlic. Strip the thyme from the stalks and finely chop. Rinse the cavolo nero, then strip from the stalk and roughly chop. Quarter the lemon. Drain and rinse the chickpeas

Oven time

  • Transfer to the chicken to the lined baking tray and bake for 9 mins
  • After 9 mins, coat the chicken with the mustard, honey and half the thyme. Add the cavolo nero to the other side of the tray, toss with 1/2 tsp oil, a pinch of salt and pepper. Roast for a further 5 mins, until the chicken is cooked through and the cavolo nero is soft

Time for chickpeas

  • Meanwhile, reheat the frying pan with 1/2 tsp oil on medium heat. Once hot, add the leek and a splash of water and cook for 5-6 mins, until softening. Season with salt and pepper
  • Add the garlic and the remaining thyme and cook for 2 mins, then add the miso, chickpeas, soft cheese and 100ml water (50ml for 1 person). Simmer for 4-5 mins, until thickened slightly
  • Add a squeeze of lemon to the chickpeas, taste and season if needed

Final steps & plate up

  • Check your chicken is cooked through by inserting a skewer into the thickest part of the meat; the juices should run clear
  • Slice the chicken against the grain
  • Share the chickpeas between bowls, topped with the sliced chicken and roast greens. Drizzle any remaining juices from the chicken tray over the dish and serve with the remaining lemon wedges
