Speedy Ginger Turkey Noodles with Peanut Salsa

A super speedy stir-fry. Starring tender British turkey, sizzled with ginger, garlic and zingy lime juice. Add tenderstem broccoli and brown rice noodles, then finish with spring onions and crunchy roasted peanuts. It's ready in 20!

Before you start

  • Bring a large saucepan filled with salted water to a boil
  • Pull out a sieve, a grater, a medium frying pan & small bowl

Prep the veg

  • Thinly slice the spring onions and pepper. Trim the broccoli and pak choi, then cut both into bite-sized pieces
  • Finely chop or grate the garlic and ginger

Time to noodle

  • Add the noodles to the saucepan, gently separate with a fork, and boil for 3-4 mins, until cooked
  • Drain, then rinse under cold water

Get sizzlin'

  • Heat the medium frying pan with the 1 tsp oil on medium heat. Once hot, add the turkey and cook for 5 mins, turning occasionally, until golden brown
  • Add the pepper, broccoli and pak choi to the pan and cook for 3 mins, until softening

Build the dish

  • Add the ginger and garlic to the pan
  • Cook for 1 min, then stir in the teriyaki sauce, juice from half the lime, half the spring onions, cooked noodles and a splash of water
  • Cook for 1 min, until the noodles are piping hot and the turkey is cooked through
  • Check the turkey is cooked through by cutting a large piece in half; the flesh should be white and the juices running clear.Season with salt and pepper

Plate up

  • In the small bowl, combine the peanuts, sesame oil, remaining spring onions and lime juice.
  • Squeeze over the remaining lime juice (to taste)
  • Serve the turkey noodles into bowls and drizzle over the salsa
