  1. Preheat the oven to 240C/ fan 220C / gas mark 8 and boil a kettle. Dissolve the stock cube in 400ml boiling water, add the yoghurt, cashew 'parmesan' and the the juice from lemon. Mix.
  2. Dice the onion. Finely chop or crush the garlic. Slice the sundried tomatoes.
  3. Heat a medium-sized non-stick pan with 1 tbsp oil on a medium-high heat. Season the chicken with sea salt and black pepper and cook for 2 mins on each side. Add the potatoes, onions and garlic. Cook for 5 mins, add the stock mix and transfer to an ovenproof dish and bake for 20 mins.
  4. Reboil a kettle. Cut the broccoli into florets and place in a pan with 800ml salted boiling water. Boil for 5 mins, then drain.
  5. To plate spoon on the chicken breast and saucy potatoes, add the broccoli & garnish with the sesame seeds.
