British Sirloin Steak Medallion with Chimichurri, Fries & Pepper Salsa

Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9 / air fryer 200C
  • Line a baking tray with parchment paper
  • Pull out a medium bowl, a small bowl & a large frying pan

Make the fries

  • Remove the steaks from the fridge and allow to come to room temperature. Season both sides with salt and pepper
  • Cut the potatoes into fries
  • Place the fries onto the lined baking tray, toss with 1 tsp oil and season with a pinch of salt and pepper
  • Roast for 25-30 mins / air fryer 20-25 mins, until soft and golden

Salsa time

  • Dice the peppers into 1cm cubes. Halve the tomatoes. Finely chop the parsley
  • Add all to the medium bowl with the oregano and 2 tsp oil. Season with salt and pepper

Get sizzlin'

  • Heat the large frying pan with 2 tsp oil on medium-high heat. Once hot, add the steaks and cook (as a guide: cook for 2-3 mins on each side for medium-rare, or 5-7 mins for well done)
  • Quickly sear the edges of the steaks, then leave to rest

Meanwhile, make the chimichurri

  • Deseed and finely dice the chilli. Finely chop the coriander and the half pack of capers
  • Add all to the small bowl, along with the vinegar and 2 tsp oil. Season to taste with salt and pepper

Last bits & plate up

  • Slice the steaks against the grain
  • Just before serving, toss the rocket through the pepper salsa
  • Share the steaks between plates, with the fries and salsa alongside. Drizzle with the chimichurri
