Juicy Sharing Sirloin Steak with Romesco & Sage Potatoes

The star of the show is sirloin steak from juicy British beef - therefore, we're keeping everything else simple. Crispy roast baby potatoes. Smokey and tomatoey romesco sauce. Wilted cavolo nero, lightly seasoned. It's the best of British produce.

Before you start

  • Preheat the oven to 240C / fan 220C / gas 9 / air fryer 190C
  • Line a baking tray with parchment paper
  • Pull out a large oven-safe frying pan & a small bowl

Get the veg into the oven

  • Halve the potatoes
  • Dice the pepper into 2cm squares
  • Place both onto the tray and toss with 1/2 tbsp oil, a pinch of salt and pepper. Roast in the oven for 15 mins / air fryer 10 mins

Get sizzlin'

  • Heat a large oven-safe frying pan with 1/2 tbsp oil on high heat
  • Season the steak with salt and pepper. Once the pan is hot, add the steak and cook (as a guide: cook for 2-3 mins on each side, quickly sear the edges of the steak, then place in the oven for 5-6 mins, turning halfway, for medium-rare, or 3-4 mins on each side then place in the oven for 6-8 mins for medium-well)
  • Quickly seal the edges of the steak, then remove from the pan
  • Leave to rest

Roast the tomatoes

  • Halve the tomatoes
  • After 15 mins of the veg roasting/ 10 mins in the air fryer, remove the tray from the oven
  • Transfer the roasted pepper to a chopping board and finely chop, then add to a small bowl
  • Add the tomatoes to the potato tray and toss with 1 tsp oil and a pinch of salt
  • Roast the potatoes and tomatoes for another 10-12 mins / air fryer 10-12 mins until the veg is soft and golden

Make the romesco sauce & cook the cavolo nero

  • Finely chop or crush the garlic
  • Add the garlic, paprika, almonds and yoghurt to the bowl with the chopped pepper. Season with salt and pepper and mix well
  • Reheat the steak pan to medium-high heat. Once hot, add the cavolo nero and a splash of water
  • Season with a pinch of salt and cook for 3-4 mins, until wilted

Plate up

  • Pick half the sage leaves from the stalks and finely chop. Slice the steak against the grain
  • Just before serving, toss the roasted veg with the cavolo nero, sage and half the romesco sauce
  • Serve on plates and top with the steak
  • Spoon over the remaining romesco sauce
