Southern-style Denver Steak with Cajun Wedges, Honey Garlic Sauce & Jalapeños

We give tender Denver steaks a Southern twist for a crowd-pleasing steak dinner your family will love. Starring mixed potato wedges, tossed in warm Cajun spice, a refreshing apple and lettuce salad and a more-ish honey garlic sauce to tie everything together. Finish with a sprinkle of pickled jalapeños (for those who'd like them) and you're ready to dig in!

Before you start

  • Line a large baking tray with parchment paper
  • Pull out a large frying pan, a small baking dish & a large bowl

Get the wedges on & do the prep

  • Remove the steaks from the fridge and allow to come to room temperature. Season both sides with salt and pepper
  • Cut the potatoes and sweet potato into wedges. Place the wedges onto the lined baking tray and toss with two-thirds of the Cajun spice mix (add less for less heat), 1 tsp olive oil, salt and pepper. Roast for 25-30 mins until soft and golden
  • Core and thinly slice the apple. Trim and thinly slice the lettuce. Add both to the large bowl and toss with the vinegar and a pinch of salt and pepper

Roast & sizzle

  • Trim the green beans and add to the small baking dish. Toss with 1/2 tsp olive oil, salt and pepper. Roast for 12-14 mins, until tender
  • Heat the large frying pan with 1/2 tsp olive oil on medium-high heat. Once hot, add the steaks and cook (as a guide: cook for 2-3 mins on each side for medium, or 3-4 mins for medium-well. For thicker steaks, cook for an additional 30 secs on each side). Quickly sear the edges of the steaks. Remove from the pan and leave to rest

Make the honey garlic sauce

  • Reheat the frying pan on a medium heat. Once hot, add the garlic paste and remaining Cajun spice (add less for less heat). Cook for 1 min, then add the maple mustard dressing, honey, tamari and 2 tbsp water. Cook for 2 mins, stirring regularly, until thickened. Season to taste
  • Roughly chop the jalapeños

Plate up

  • Thinly slice the steaks against the grain
  • Serve the steaks onto plates, with the wedges, green beans and salad alongside. Spoon the honey garlic sauce over the steaks. Sprinkle over the jalapeños (for those who'd like them)
