  1. Bring a large saucepan filled with salted hot water to a boil. Add the rice and boil for 25-30 mins, until cooked, then drain.
  2. Finely dice the onion. Roughly chop the pepper. Heat a large saucepan with 2 tbsp oil on medium-high heat. Once hot, add the onion and pepper and cook for 4-6 mins, until softened. Meanwhile, finely chop or grate the garlic and ginger.
  3. Add the garlic and ginger to the pan. Cook for 2-3 mins, then add the spice mix. Cook for 1 min, then add the passata and coconut milk. Simmer for 8-10 mins, until slightly thickened.
  4. Cut the cod into 3cm pieces, then gently stir it through the curry sauce. Simmer for 12 mins, until cooked through. Season with salt and pepper (to taste).
  5. Meanwhile, cut the broccoli into florets. Bring a medium saucepan filled with salted hot water to a boil. Add the broccoli and boil for 3-4 mins, until cooked, then drain.
  6. Check your fish is cooked through; it should be steaming hot, opaque and separate easily with a fork. Cook for longer if necessary. Serve the cod curry with the rice and broccoli. Garnish with the coconut chips.
