Christmas Sirloin Steak with Roasted Veg & Honey Sprouts

Your favourite steak dinner, festive edition! Sizzle a succulent British sirloin steak. Then serve with a medley of sweet parsnips, vibrant carrots and golden potatoes, roasted to perfection. A side of honey sprouts and a luscious onion gravy complete the feast.

Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9 / air fryer 200C
  • Line a baking tray with parchment paper
  • Pull out a large frying pan, a medium frying pan & a measuring jug

Roast the veg

  • Remove the steak from the fridge and allow to come to room temperature. Season both sides with salt and pepper
  • Halve the potatoes lengthways (quarter any larger ones). Cut half the onion into 2cm thick wedges. Cut the carrot and parsnip into 3cm half-moons
  • Place the prepped veg onto the lined baking tray, then toss with half the garlic herb paste, 1 tsp oil and a pinch of salt and pepper
  • Roast for 25-30 mins / air fryer 20-25 mins, until soft and golden

Sprouts time

  • Halve the sprouts through the stem
  • Heat the medium frying pan with 1/2 tbsp oil on medium-high heat. Once hot, add the sprouts and cook for 2-3 mins, until they start to char. Season with salt and pepper
  • Add 1 tbsp water (1/2 tbsp for 1 person), the honey and the remaining garlic herb paste. Toss to coat. Once the water has evaporated, mix in the sunflower seeds. Remove from the heat and cover to keep warm

Get sizzlin'

  • Heat the large frying pan with 1 tsp oil on high heat. Once hot, add the steak and cook (as a guide: cook for 3-4 mins on each side for medium-rare, or 6-7 mins on each side for well done)
  • Quickly sear the edges of the steak, then leave to rest

Make the onion gravy

  • Pick and finely chop the fresh thyme. Thinly slice remaining onion
  • Reheat the large frying pan with 1 tsp oil on medium heat. Once hot, add thinly sliced onion and cook for 3-4 mins
  • Add the cranberry relish, tamari, thyme, stock and 150ml water (75ml for 1 person). Stir to combine and cook for 2-3 mins, until thickened slightly

Plate up

  • Slice the steak against the grain
  • Share the roasted veg and the honey sprouts between plates, topped with the steak. Spoon over the onion gravy
