Christmas Sharing Sirloin Steak with Roasted Veg & Honey Sprouts

A festive steak dinner with all the trimmings. Tender sirloin steaks get sizzled to perfection, then served with a vibrant medley of roasted vegetables and charred honey sprouts. A creamy homemade onion gravy completes the feast.

Before you start

  • Preheat the oven to 240C / fan 220C / gas mark 9 / air fryer 200C
  • Line a baking tray with parchment paper
  • Pull out a large frying pan, a medium frying pan & a measuring jug

Roast the veg

  • Remove the steaks from the fridge and allow to come to room temperature. Season both sides with salt and pepper
  • Halve the potatoes lengthways (quarter any larger ones). Cut 1 onion into wedges and thinly slice the other. Cut the carrots and parsnip into 3cm half-moons
  • Place the potatoes, carrots, parsnip and onion wedges onto the lined baking tray, toss with half the garlic herb paste and 1 tsp oil
  • Roast for 25-30 mins / air fryer 20-25 mins, until crisp

Make the honey sprouts

  • Halve the sprouts
  • Heat the medium frying pan with 1/2 tbsp oil on medium-high heat. Once hot, add the sprouts and cook for 2-3 mins, until starting to char
  • Add 50ml water, the honey and the remaining garlic herb paste
  • Once the water has evaporated, add the sunflower seeds. Season with salt and pepper

Get sizzlin'

  • Heat the large frying pan with 1 tsp oil on high heat. Once hot, add the steaks and cook (as a guide: cook for 3-4 mins on each side for medium-rare, or 6-7 mins on each side for well-done)
  • Quickly sear the edges of the steaks, then remove from the pan, and leave to rest

Make the onion gravy

  • Strip the thyme from the stalks and finely chop
  • Reheat the large frying pan on medium heat. Once hot, add the thinly sliced onion and cook for 2-3 mins
  • Add the cranberry relish, tamari, thyme, stock powder and 300ml water. Stir to combine and cook for 3-4 mins, until thickened slightly

Plate up

  • Slice the steaks against the grain
  • Serve the roasted veg and the honey sprouts onto plates, topped with the sliced steak. Pour over the onion gravy
